Acidulated mushroom extraction for gummies and drops.

Using food grade acids in your mushroom extracts not only helps in the extraction but also changes the feeling of the resulting liquid. Acidulated mushroom extracts come on faster, have a stronger peak and a shorter overall duration of trip. For extractions, I use powdered citric acid.

To start your extraction, crush your dry or mince your fresh mushrooms or stones, you can also extract fresh or dried mycelated grains or LC. When crushing, try to make your pieces fairly small. More surface area = better extraction but too small (powdered) will make filtering difficult.

Bring a pan with water to simmer on the stove. I'd recommend dH20 or filtered water but tap will work. Dissolve your citric acid in the water and stir in your mush. Gently simmer the solution for 20min stirring occasionally. After 20 min, pour the mushroom solution through a metal sieve and squeeze out as much liquid as possible. Return the mushrooms to the pan and cover w/water (no citric acid). Simmer 20 min then drain and squeeze again.

Filter your combined mushroom liquid then into a sealed container then place in the fridge overnight. This will allow all the sediment to drop to the bottom of your jar so you can decant the.clear liquid off the top. The cleaner your starting liquid the cleaner your final results and it is better to filter before reducing. For making drops, you need to filter the best you can. A Buchner funnel would be incredibly helpful!

Once you have your clean, filtered mushroom liquid, it is time to reduce it's volume. Large diameter flat frying/sautéing pans are best. Their low sides and large surface area allow better evaporation. Pour your clean mushroom liquid into the pan and bring it to a hard simmer/gentle boil. Have a silicone spatula on hand, it will be your new best friend! Keep an eye on your reduction, scrape down the sides and turn down the heat as the liquid starts to get low. You can transfer to smaller diameter pans as needed.

Once it has reduced enough, turn off the heat and measure the volume of the remaining liquid so you can calculate dosage.

Now for the bad news, extraction and recovery are not 100% effective so you will experience a % loss when calculating dosage. The numbers below account for a 1/6 loss. Plus, over time, there can be degradation of active ingredients so storage needs to be taken into account too. On the plus side, citric acid is an antioxidant so, hopefully that helps with preservation.

-For gummies, I try to think in 1/2C increments when reducing, it fits my recipe. If I reduce too far, just add some water.

1- 6oz box of Jello
2- 1/4 Oz packs of Knox gelatin
2- Tsp vegetable glycerin
1/2C acidulated mushroom extract liquid

Put the Jello, Knox and cold mushroom extract in a small pot and let bloom for 2min. On med heat warm the solution while stirring with a rubber spatula to dissolve the powdered ingredients, do not boil. Once dissolved, stir in your glycerin and pour into silicon molds, let set overnight in the refrigerator. After pulling the gummies out of the molds, I usually make vacuum seal packs with enough gummies for a couple people to have a really solid trip.

*I forgot to mention, you can rinse your gummies pan after pouring. Usually I'll add a couple tablespoons water to the pan, put it over low heat and scrape it down w/silicone spatula. I'll tilt the pan to help get it all. Dump that water into a small glass and repeat if necessary. Put the glass in the fridge to set or even drink it down if you have time. It should come out more Jello like than gummy so try to use it up first.*

-For mushroom drops it will take extra attention and patience. You will need to filter really well and be very careful late in the reduction not to burn it. This still needs further reduction.

Making mushroom drops are easiest when using stronger mushrooms like Panaeolus, Subtropicalis, Ps. Cyanescens and others. Follow the directions above but reduce even further, it will become like a thick caramel. Depending on how thick it became, you can thin it with a tiny bit of water or moonshine. I may have found something better though! My wife donated her small, brown, half-full , Turmeric extract dropper bottle to me. Turmeric is a mild MAOI and the dropper solution is grain alcohol! 😀 BTW, 1ml=20drops.

Now for some #s

For the gummies, made from Subtropicalis and Zapotecorum:

36.4g mushrooms
3C water
1/2Tsp citric acid
1.5C water to rinse

Reduced to 1C for a double batch of gummies. In a perfect world, .13g per cube and 1.1 per unicorn. Maybe closer to .11g per cube and .89g per unicorn, maybe less.

For gummies made from SC Tampanensis stones.

280g minced stones
4C water
1Tsp citric acid
2C water to rinse

Since the stones are so dense, both boils were 30 min. Then reduced to 1/4C for 1/2 batch of gummies. In a perfect world, 4.3g per cube, in reality probably 3.6g per gummy.

For Panaeolus/SC Caerulescens drops:

15.3g mushrooms
1C water
1/4 Tsp citric acid
3/4C water to rinse

Reduced to 9ml and added 1ml grain alcohol/turmeric. In a perfect world, 1.53g in 1ml, .08g per drop, in reality, closer to .06g per drop, 1.2g per ml.

I tested 13 drops and it was easily level 2. Next time I will reduce further to make them stronger.

151.2g mushrooms
5C water
1.5 Tsp citric acid
3C water to rinse

Reduced to 50ml and added 13ml grain alcohol/turmeric. In a perfect world 2.4g per ml, .12g per drop, in reality, closer to 2g per ml & .10g per drop. Claketi bottle on the right.

The drops, with their high citric acid content, are stored in closed brown bottles, with argon gas (wine preserver), wrapped in a paper bag, in the fridge.
