Cheesy Rye

So I just made 5 rye grain jars.

I soaked the rye for 24 hours, with 25% coffee and some gypsum (what I always do).

Once I started boiling the rye, I noticed a strange smell that I can only describe as vegan cheese :confused:

I thought it might be something burning on the bottom of the pot, so I ignored it PCed the grain, threw some agar wedges in the next morning.

The funky thing is, the smells still there! I noticed as soon as I opened the PC. I inoculated the jars hoping it would wear off, but days later, I can still smell this vegan cheese funk through the SFD's.

I searched "cheese rye" and found this thread. Bodhi says it's Clostridium bloom, and advises this guy to toss it and restart.

However I'm confused... Even if my rye had clostridium after boiling, wouldn't the PC have killed off everything? Making it safe to use?

Anyway, thoughts? Advice? Anyone else have cheesy smelling rye?

You cant cook rotten beef because cooking only kills contamination not the byproducts they make.
