PC'ing rye grains

Greetings folks:
I am PC?ing rye grains that I purchased from mycosupply? this is the first time I am attempting such a task, so if you see something wrong, please chime in, PLEASE!
I am using half gallon jars, and I have a digital scale
RECIPE 420 grams of water 400 grams of rye 2 grams of gypsum ??? (I called home depot, the only gypsum they have is located in the paint section, used for drywall, a powdery substance? IS THIS OK?)
Let it soak for 12-24 hours ???(should I shake before and/or after soaking?)
PC for 1 hour at 15 PSI
Once PC is done and stable, use towel or baking gloves to shake and evenly distribute moisture, then place back in PC and let cool/dry.
Ok my questions are?.
1. Gypsum - I called home depot gardening center, the only gypsum they have is located in the paint section, used for drywall, a powdery substance? IS THIS OK? 2. After I mix the water, rye, and gypsum? should I shake the jars before I let it soak? Or should I soak it then shake the jars before PC?ing? 3. Once its done PC?ing, how long do I have to wait to inoculate?
Thanks? I have done my research, but I could not find the answers to the above questions? if somebody with more experience help me out I would really appreciate it.

you sound like your on the right track, I don't know anything about gypsum.
But you might want to read this for food for thought SOAKING WBS - GRAINS & TIMES - FINAL ANSWER

more or less, how long will it take for it to reach room temperature... few hours, couple of days???
Does anybody else out their use gypsum for their rye grains?!?!? I would really like to know your experience???
one more question.. can I put the jars in a heavy duty zip lock bag then place them in the PC, or will the zip lock bags melt??? Just want to make sure they do not get contaminated once I take them out.. (I will put foil on the lids)

It depends but it takes a while.
I have been getting in the habit to PC late at night before bed.
And then take care of it in the morning.
But yeah it can take 3-6 hours or so for them to be cool enough.
Do not close the jars in anything.
Once the PC is cool enough to handled, then shake it up, spread the moister content. Then let cool in the PC.
Don't force the PC to cool and don't vent it under pressure. Foil on the lid is just so water does not build up on the lids and add a little protection but not much.
Also remember to have holes that are not taped up, the jars need to be able to breath during the PC or a vacuum will form.

Garden centers will sell 'garden gypsum', but the stuff in the drywall section you found is most likely the same thing. My bag of 'garden gypsum' is obviously a byproduct of the sheetrock making industry. It has little pieces of drywall paper mixed in with the white powder. A pinch between your thumb and forefinger is the perfect amount for a quart jar of rye. RR
