Apostata's Clean Sous Vide Pasteurization Tek

I spent a long time coming up with this way to do the cleanest pasteurization possible with the ability to let the poo cool without becoming contaminated. I also wanted to avoid the poo getting mixed up into the sous vide machine. Not to mention pasteurizing larger batches than with the mason jar method.

I know other people have pasteurized with sous vide, but I'd never seen a walkthrough, so I came up with this. This method lets me accomplish all of my goals, and it uses mostly equipment I already had at the house. (Although, admittedly I did buy a sous vide machine on amazon for $40)

You don't have to worry about contamination during cool down you could lay it right in the tubs. That is the entire purpose of pasteurization that you don't worry about contaminants after doing it. You could sneeze on it.

Fair enough, although in order to lay it right in the tubs, if I understand correctly, I would be mixing in my colonized rye. I wouldn't want to shock/kill they myc from mixing it in at pasteurization temps, so it would seem preferable to wait for a cool-down.

And I wouldn't want the shit exposed while cooling, because at some temp, it would be a friendly environment for contams, which would then compete with the colonization.

Am I missing something here?

Lay it in the tub to cool first. You wouldn't put spawn into hot substrate doesn't make sense

If it being exposed to contamination on cool down was an issue then pasteurization would be pointless in the first place

thanks for the nice write up!  I've been doing a 7-gal bucket filled to the brim with field capacity substrate inside an 8-gal pot filled with water.  stick in a thermometer and boil until pasteurization is achieved.

I've been experimenting a lot lately too.  I've tried similar pillowcase methods in the past but I think this might be a little cleaner.

I think the idea of placing the hot substrate into the tub immediately is certainly possible, but could be debatable depending on how you view the temperature vs contaminability curve.
Regardless of whether you cool in the bag or not, the main point of the method is to demonstrate a good way to pasteurize using sous vide. I'd never found a complete walkthrough for it.

the pillowcase inside the bag was the real breakthrough for me. I was going to do it the "bucket in a bucket" way, but didn't feel convinced that the heating would be even, or that I could avoid evaporation of field capacity.

Being able to submerge the bag seemed ideal to me.

Finally, a use for sous vide.

Incubation chambers are completely unnecessary, and submerging those jars in 80f water is probably just covering the jars in contaminates. 

I would not ever want those jars in my SAB.

You’re leaving the food in way too long then Piggy!  I use mine a lot for chicken, roasts, Creme fresh. 

Plan on trying it for pasteurization too, love the idea of leaving it and not worrying about it getting too hot or not heating all the way through.  I am a little surprised you only leave for an hour or two.  How long does it have to remain at 160 to be pasteurized? 

What made the pillow case a breakthrough for you?

I'm getting serious déjà vu off of this, haven't we had this conversation before?

Anyway, sous vide is a way over hyped method of cooking.  There are so many better things to do to a cut of meat.  I have always found it unappetizing compared to every other method of slow cooking.

Cooking in a bag is a bit of a turn off but you’ll never cook better chicken breasts.  I remember having a sous vides debate before.  I am 100% right though so I have to convince you :awesomenod:

probably unnecessary, but my house was down in the 60's, which didn't seem ideal. As far as contaminants are concerned, I'm not sure why it would be more prone to contamination than open air.

Sous vide has been done before, yes, but I wanted to post a higher-volume method. I got a couple of gallons worth of substrate this way. Otherwise I probably would have pasteurized with mason jars.

It wasn't the pillowcase that was the breakthrough. A pillowcase seems to be  the primary component of most of the bulk pasteurization methods. Particularly in the area of controlling field capacity. The breakthrough, for me, was putting the entire pillowcase inside of a garbage bag rather than bucket in a bucket (which was my first approach.)
Using a bucket in a bucket evaporates out the moisture in the substrate, as well as (probably) uneven heating. I tried out a few things, this gave me the best results, and the ability to set the field capacity before heating. As well as being very clean.

Or for people who like to walk away from it.  I can make the most tender rare moose roast in it.  I can make a rare moose roast anywhere, but not that tender.

I also want to try using it in a GH set up.  Not sure if it will work yet but going to try.
