I use one for small batches.  If you hydrate whatever you’re pasteurizing with hot water it helps move things along.

Lately I'm only making a shoebox or 2 at a time anyway. How long do you run 2 quarts?

It was a bonus to buy another toy for mycology and not get the eye roll from the wife since I'll also be cooking perfect steaks with it.

I hope you're making burgers with it, too. You can cook the burgers sous vide, then when
they're done blast the outside with a propane torch to get them a little crispy. Sounds
crazy, but some of the best burgers I've ever had.

I had the idea to use one of those for pasteurization a couple years ago, when they were still prohibitively expensive. I’m glad someone is doing this. I never went through with it. How big of a container can it heat up?

@ Eno - depends on the wattage of the unit but typically, 3-5 gal.

Mycolorado do you use it for hpoo pasteurization? If so would you mind working a tek up for us noobs who can't wrap our head around it!

Yeah, hpoo and casings.  TBH, I just load the sub, hydrated with really hot water and add to the water bath, let it come up to temp and hit the timer.  Give it a try!  If I’m doing more than a couple rounds, like a bag, I try to weigh it down so it’s completely submerged.

Now that the prices of sous vide machines have dropped I may try it again. It would be really nice to pasteurize in a 5 gallon bucket in the floor and not have to use my stove for anything but heating water and prepping grains, and that’s what I’m working towards

Fosho.  They also maintain a nice even temp whereas the stove top fluctuates and requires constant attention...these are definitely set and forget.

The experience portion is derived mainly from cooking in regards to this device and common ******* sense in regards to the mycology aspect.
