Analysis of nutritional value of various substrates ?

when using bulk substrates one usually is going to supplement them with something very rich in protein ( mainly N ? ). Is that right ?
In Stament's GGMM there is a list of materials and their nutritional values. How are these analysis made ? Is there a way that you can do that at home ?
I was looking for the values of human pee, chicken manure, beer, soft drinks etc. but could not find them in that book.

If it's food there should be nutritional info on the package (nutrition facts.) Other than that you really have to look it up (a good web search can do wonders.)
