How to slow the growth as much as possible?

I won't bother explaining WHY i need to do this, but here it is: I have innoculated a ton of jars of corn. I need to slow down the mycelium growth so that they're 100% colonized and ready to be fruited about a MONTH from now. Corn colonizes very quickly.. like 2 weeks i've been reading. Obviously I can drop the temperature.. but how low is safe? And will the corn rot if it goes too long without being colonised? Thanks..

I stalled mine successfully by putting in the frig. I put them in a tupperware type container, sealed that around the edges w/duct tape and then put the whole works in a dark trash bag.
They were at like 90% at the time. Expect some blueing and some piss water in the jars when you take them out. I drained the water off and didn't lose a cake.

You could slow growth by placing the jars in the fridge, but be careful of contamination and the temperature being to low. Also, CO2 build up causes the mycelium growth to slow down. You could put the jars in an airtight plastic bag, which is sterile if it is new and unopened, and place them in the fridge at a moderate temp setting. Also, I suggest that you allow the substrate to fully colonized before you slow the growth down, that way you can ensure that the cakes will be ready in a month.

Un-colonized substrate should not contaminate if it was properly sterilized and has not been exposed to contaminants. Also, Un-colonized substrate is more susceptible to contamination.

As a follow-up for future reference... Does anybody know how long I can keep sterilized corn jars before they go bad? Be it drying out, rotting, whatever.. i just want to know their shelf life. Thanks.

I imagine you could keep em on the shelf for a month without anything going wrong. Sterile corn will not rot. Colonized corn is pretty contam resistant too.

I've seen jars that were stored at room temp for 2 months fruit successfully.

Grain won't tend to pin without a casing so you won't have much to fear.

Still, a fridge is best.

Any other suggestions for this ?

I have a shroom session planned with some friends for the weekend coming and the damn things are after growing by like 2 inches since I left for work this morning!

Living at home with the folks, so the fridge isn't much of an option!
