Heat drawing moisture out of jars.

OK I have a incubator setup with a container with water + fish tank heater then another container inside of that. My PF style jars are still drying out on the bottoms of the jars. When I open these jars I notice that the dry verm barrier is now wet. The water in the jars seems to be drawing upward. Being that it is winter the air is very dry. Which may have something to do with it. What can I do to fix this. I was thinking maybe of starting with a wet verm barrier instead of dry. Or possably keeping jars upside down while they grow. Any Ideas?

how do you know the bottom's dry?

If i tip the jars I can see loose verm in the bottom.Also when the jars stall, I end up opening the jars and poping out the cakes. Then I can clearly see that the bottoms are dry. I usually just cut the uncolonized bottom off with a knife.
