rye drying out on PCing

This is the second time this happens to me.
I let the rye simmer for about 45 minutes and it comes out just perfect. I then load it into quart jars (filled about one half to two thirds) and pressure cook for about an hour (with like 2 inches of water in the PC). When I open the PC afterward, the rye kernels are much drier than when I first loaded them into the jars. Almost all of the water in the PC has evaporated.

I might add that I screw on the lids (without any holes) loosely on the jars, and cover them with tin foil secured with rubberband.

Can anyone tell me what's wrong? Could it be that the pressure cooker isn't working fine?

Something is wrong if most of the water in your pressure cooker is evaporating.Are you noticing a lot of steam escaping?. When I PC,I turn the burner on low and barely have the petcock open while maintaining 15psi. I really can't imagine that much water/steam escaping!

Well a lot of steam, I don't know... Some comes out from the side of the lid before the pressure is established, and after that, there are some wet bubbles coming out between the lid and the little weight, but lacking a point of comparison, I don't know what "a lot of steam" would be...

Thats a lot! Should'nt be any at all between the lid and pot,should be NO wet bubbles at all. (Some one correct me if I'm wrong) You may need a new seal, but you might want to try smearing Vaseline petroleum jelly on the seal. Don't put any around the weight at all.

Rye always looks a lot drier after PC'ing.
Mine often looks quite dry but still works fine. Just use it, don't worry about it. Better too dry than too wet (wet rye gets contaminated very easily).
