Oysters in ziploc bags outside. With pics

I was having troubles keeping my temps low enough inside to get these to grow properly so I tossed them out on my deck and they did pretty good. They got infested with bugs but grew really well. So now I know my indoor problem was temp. It was likely FAE as well as these had very short stems and I was getting stems a bit longer inside. Oysters do seem to like cool temps (50s & 60s) and a crazy amount of FAE.

Looks good, I'm getting ready to do some oysters here in a few weeks. Wife insisted they be pink however :smile:

Typical. It can't be denied that pink oysters have to be one of the most beautiful oysters around. Pity they don't taste very good.

I still want to know if they lose anything in regards to flavor or texture when you let them get that big!  I had almost a pound of phoenix oysters I didn't eat because they were bigger than my hand.

Outdoor is the way to go with oysters, IMO.  They're just more substantial!  Sure, they get bugs, but that's just a protein bonus. :grin:

I don't think they taste very good if allowed to get this big. I was not going to eat them anyway after being so infested with bugs. Minor bug problem is not a problem but a day after these pics a couple mushrooms fell of because the bugs eat so much of the stem away. It was like swiss cheese. It is getting cold enough here that my basement should get cold enough to get another batch going soon. Then I will have my feast :rockon:

Most oysters do best in the 45-55f range. Warmer temps will make them pale and thinner.

Oysters attract more sciarid and phorid flies than any other mushrooms.  They come as soon as the fruits begin to release spores, so its best to pick before spores release.

Is that for fruiting or incubating? Everything I've read says 70.

Oyster's of that size taste fine and still have an edible texture. Those look really nice coming from that size of a substrate. Good stuff!

The bugs on these were little beetles. Black and orange if I remember right and about 3/16" long

incubate around 70f, fruit 45-55f.  If those are pink oysters (i can't really tell from photo) then you want temps to never drop below 70f during fruiting.

What are those beetles?  Every time I go hunting for wild oysters, they're all over the place.  Hundreds of them.

Shining flea beetles (Asphaera lustrans) I see them on outdoor mushrooms all the time with a couple other beetle species...aren't they cute!

I've noticed that many of the oysters I let grow to "full" size have fuzzy mycelium growing on them.  Is that from the mushrooms themselves, or from spores germinating?

Oysters have amazing ability to shift between states of growth.  Try to keep in mind that Panellus species have hairy caps (and can be quite large) that resemble oysters that have begun to grow mycelium again.  The oysters regrowth will mat down when touched while the Panellus hairs won't.
