Rye grain is my favorite! I use 1 cup ORGANIC rye grain to 3/4 cup water, actually just a little bit less. I sterilize 1.5 hours at over 15 psi. Check your altitide; you may need to increase your pressure due to elevation. Filter discsare a blessing! Otherwise, wrap foil over lids that are on loose. Reason is when jars cool, if they are on tight a vacumn can form; sucking in contaminates as it is opened: "Spontaneous contamination." Let cool in the box they came in sprayed with lysol. Inoculate right away if possible. Shake jars after 5 days- give or take. Once completely white, use to spawn, or lay out in small trays and case. Note: If several grains do not turn white, you may have bacillus, or some other bacteria perhaps. Sniffing jars is not recommended, however if a sour apple smell is detected it may be bacillus. Buttered popcorn- gray whisker mold, etc. Once you try grain, anything else seems insane!
