Rye Grain Recommendation (for Bacteria probs)

I thought I'd share a new rye grain technique that I've found very effective, which simply put, is to pressure cook it in the open pot for 20m at 15psi, allow to sit for 24h, place it in jars or bags, then p. cook again for 1h @ 15psi.
I have had intermittent problems with high bacterial endospore loads in my rye grain, resulting in contaminations, and have finally found a method that best minimizes this problem, as well as providing me with a uniformly cooked, non-sticky, shakable rye substrate.
Pressure cooking rye + H2O in whatever container does not eliminate bacteria, because the endospores are heat resistant, and germinate after p. cooking, nor does it produce a uniformly cooked grain, leaving the bottom layer overcooked, while the top is often dry.
So before now I was pre-cooking or soaking the rye, allowing 24h for the endospores to germinate, then pressure cooking, and that helped to minimize bacteria, but did not get rid of it altogether, and the rye was never fully cooked (still hard in the center), and hence slow to colonize. In addition, I always felt that much of the nutrients were being leached into the cooking/soaking water, and thrown away.
So my current trick is to pressure cook the grain IN THE POT, with a large excess of water (at least an additonal 1/3 the volume), for 20m at 15psi. This produces a nicely cooked (not over cooked) kernel. Excess water is drained, (there isn't much) and the rye is allowed to sit for 24h before being placed in containers and pressure cooked again for 1h @ 15psi.
If you find the grain often sticky (a problem esp. if there is a lot of rye "powder" in with it), it can be rinsed after the 1st cooking with cold water to clean it.
It's a simple tek, nothing ingenious, but it works nicely, and is worth trying if you've had problems with grain in the past.

gonna have to try this. i usually steep for an hour and then pc, but still get that damn green mold and rarely the black, even if the jars have no air exchange, which i tried since i figured the contams were coming in through the polyfill. unless the green shit is a bacteria and i'm still gonna be screwed. willing to try anything to quit throwing out half my jars though.

sounds good if your having trouble... 70 mins in the PC after sitting in the jars with water premixed for 24 hours always has worked well for my brothers friend that knows this other guy.

this is a problem, since air exchange is needed.
Sealing the jars are the best way to promote contams cause you're creating an enviroment where molds thrives ( CO2 saturation)

I've had good success with precooking in the pot, microwaving until hothothot 24h later, and filling the jars and p-cooking 24h after that.
