Upsidedown Cakes / Hollow Stems

I fully appologize for the second post in a couple of 24-hour periods, but I am just too damn curious about these two questions:

1. During a flush of fruits that are coming out of the bottoms of the cakes, has anyone ever turned them over so that the tops of the cake are directly on the perlite and so that the fruits grow upwards??? I've heard that this works but have also been told that you should always fruit your cakes in the same position that you've colonized them...

2. Also, anyone ever had hollow stems??? Especially when I put the cakes directly on the perlite, the stems of my fruits get bigger and the stems grow hollow, sometimes with more water/moisture in them...anyone ever experience this...?

You should fruit the cakes in the same position as they colonized.

They are supposed to be hollow.
