I assume things went a bit rocky, eh? well I'm sure you can touch them, it's better if your hands are sterile, you sprayed some bleach diluted in lots of water, and other things help keep crap sterile. Just don't forget to spray the casing with a little H2O2 and contams should run for the hills while your casing gets moist and just keep it in the dark for about a week, make sure it doesn't dry up, and I think you'll be fine.

I had the same worry the first time I cased, also. The mycelia is pretty resilient at this stage and generally strong enough to fight off infection. Mostly you have to worry about contams where there isn't established mycelia on some nutritious material, which is mainly the casing layer if you use peat moss at all.
It might behoove you, though, when handling casing and the cakes, to go out and buy some cheap latex gloves like doctors use. You can find them in the cleaning section of a good supermarket for a couple bucks per ten pack. I generally get them coated with hydrogen peroxide before handling anything, since my biggest problem is with cobweb.
