I let my jars cool, wih lids loose, wrapped in a cloth thats been soaked in a water and bleach solution. This way the vacuum effect caused by your hot jars sucks in air thats steril while they cool. No contams since doing this.

Did you sterilise the surroundings with an alcohol-spray?

Did you sterilise your needle with fire or alcohol? (I personnaly don't like fire!)

What about your hands? to be sterilized as well or gloved and sterilized with alcohol.

What about your breath? Do not blow air. You can get masks...

If the contam comes from air (which we cannot know) you can try the "oven tek" in order to be sure. Before you put them in your incubator, slightly spray the jars and in the incubator as well.

One cause of contaminants could be the rye itself. I have read that some people pre-soak the rye for 20 hours before pressure-cooking so that water penetrates the grain and allows to kill the germs that are more resistant to heat when dry.

On three Maza jars I innoculated (with syringe) only one started, and late. Also, it was slow in spreading its mycelium. The grain transfer, on the opposite, is much faster.

I think people reported contam problems (but rare) with the filters you use. I use polyfill in a 6-7 milimeter hole in the lid.

Can't help more. (I used all of what I'm advising you, and also tried less secure settings and never had contams up to now, but I really spray a lot in the air with my alcohol spray... it may help.)
