Well, personally I'd work with that jar separately; if it seems like it'll produce there's no need to throw it out, but then again there's no need to risk ruining your other 7 jars worth, or casings you know.

Well the shrooms are competetive with other fungi, molds, bacteria, etc. It doesn't have as complicated immune system as us, but it is survival of the strongest. If it takes over the food sources and attacks the compepitors it can win and dominate.

Also remember jars can smell funky and be cool. At least for me the first time I smelled a jar it smelled mushroomy/ like that flour/ wet/ and metallic (from the lid), so it didn't smell 'normal'. But it was perfectly healthy nonetheless. Of course it didn't stop at 30% colonization and resume again later either.

You may be interested in knowing that the first modern antibiotic (penicillin) was isolated from fungus. So yes they are able to combat invaders.
