Casing Too Soon???? Please help

Well I had 4 jars That Looked 100% colonized, I even waited after they were fully colonized to make sure.. Well low and behold I went to case tonight and started to break the cakes up, as I did I noticed the insides were not really colonized fully yet.. I allready mashed one cake up so I decided I had to finish the casing and did 3 more.. All 3 looked the same fully colonized on the outside with thick mycelium, but on the insides they werent fully colonized yet.. I cased with coir, and tried not to break the chunks up too small in hopes that things will work better that way.
I made sure to sterilize the coir, in my oven. Baked at 350 for over an hour.
I crushed cakes up in plastic sandwhich baggies, and cased in a 11 X 9 aluminum pan. I did not lay any vermiculite on the bottom just substrate and coir.
I was sterile throughout the whole process, although in my opinion theres no way you cannot expose the cake somewhat. It eventually has to hit the casing tray.
I also noticed my cakes didnt feel wet nor dry but very spongy and kinda took me by surprise when trying to crush them, it really didnt take effort but kinda felt like squishing styrafoam.. A very mushroomy smell was evident, No bad smells
In short will I be ok???? will the fact that i may have cased slightly early really ruin things? Contams? The middles were not wet and seemed partially colonized, just was not thick white like the outside.

No worries, dude. If the entire outside of the cake was colonized, then you should be okay. After you break up a cake (or shake a jar) it looks that way sometimes.

you do want the inside colonized though. If it's not ..its uncolonized substrate which will invite contams..but in your case you shouldn't have a problem.

everything sounds good to me. i just cased with coir and lost 2 casings. they looked like they had gotten cobweb mold. i'm almost positive that it's because I didn't sterilize the coir first. I've still got one casing left, but i'm not sure how well that will do either. Anyway, your procedure sounds good to me. G'luck man.

ok Update.. I guess everything I did has worked so far
I woke up 24 hrs later to find some pea sized spots on my casing layer... the mycelium has broken through... when do I switch to fruiting?
