Sushi & Sashimi

Anyone have any tips on how to find sashimi grade fish in relatively large quantities? I eat sushi and sashima a lot and make my own sushi, but I can't seem to find any stores that sell just the fish, so I'm pretty limited (I make a lot of avacado and cucumber roles).

Anyone else like making sushi? Damn it's fun.

I would say you need to go to a high end supermarket, like a Trader Joes, Central Market, Whole Foods, etc, that kind of supermarket. If you live near the coast there might be some fish markets you can go to. You can also try to find an Asian grocery store, but probably need to find one of those mega Asian grocery stores. There's only one chain I can think of, and its called H Mart.

Hire a private dick to follow your favorite sushi chef (namely, Nazawa in Los Angeles) to the docks, where plenty of other sushi chefs watch nazawa choose his fish. Really, go to a fish market and get good at selecting fresh fish. Then learn how to cut. You'll need extremely sharp filet knives. Don't fuck around. Fresh sashimi, if you've ever had truly fresh sashimi, is mana from some blissful place in the deep...

Look up food supply Compes in your phone book or on the net.US Foods http://www.usfoodservice.com/ is one that maybe around you, or a costco warehouse.http://www.costco.com/Browse/Product.aspx?Prodid=11160608&whse=BC&topnav=&browse=Or asks a place around you that makes Sushi, about where they get there Sashimi grade fish,most place keep the paper work on there seafood.

Most markets that have a decent seafood dept. will generally have fish suitable. It would benefit you go get to know your meat market manager, as well as pick his brain on ways to get fresh fish to you.
What most people fail to realize, is the coolest things about the meat market in a grocery store is the custom cuts that you can have done for you.
At my market, I can call ahead and have almost any kind of fish prepared in any way.
But, back to the point,
Some markets have different sources for different products. When it comes to meat markets, the manager genearlly shops around for prices when another order is placed. So, most likely, he will know Hon down at the docs, or Yin who has been trying to sell him fresh whole tuna for the past month.
Just let your meat market manager know what you're trying to attempt. Most likely, you will have to return at another time to pick up your prize, and be prepared to buy more than you will be able to use in one sitting. Fresh fish that has not been previously frozen can be expensive.
I agree with IgnatiusJReilly too. Learn how to choose fresh fish. There are many indicators that will help you dictate how fresh they are.
