LAZY PASTEURIZATION
    #6329547 -


This is a common meat/oven probe thermometer.
They can be had for under $5, at about any big mart.

Load a hvy duty plastic bag with hydrated casing or substrate.
Close the bag neck with a thick rubber band.
Not so tight steam cannot escape & you can insert thermometer.

Without the thermometer inserted.
Nuke the bag a few minutes until hot.
With oven mitts on, massage/mix closed bag content.
(helps even out internal temperature)

Insert thermometer through bag opening.
Check temperature.
Continue nuking for 1 minute intervals.
Flip/mix bag content each interval.

Check internal temperature with thermometer.

When it gets to BETWEEN 150 / 175 F.


Let bag rest for 15 minutes, with thermometer inserted.

When temperature drops to 125F area.
Remove thermometer & Nuke again,
for a short interval until bag content reaches 150/175F range.

Let bag rest for 15 minutes.

Repeat process, repeat process.

Remove bag, tighten rubber-band.
Store bag on rack to cool overnight.
Next day it's ready to use.

Because microwaves differ in strength.
Your times may vary.

While not true pasteurization.
It works.

The caveat is:
DO NOT HEAT THE BAG CONTENT OVER 180F.

i still preferr to do it the proper way and oh my, god knows im halla lazy :wink:

Nuke as in microwave right? Are there non-metal temperature gauges you used? Metal + microwaves = ick right?

You INSERT the metal probe, to take temperature.
You remove it to nuke the bag.
Then, insert it again, each time.
Then REMOVE it, to nuke again.
Don't nuke metal, unless you want to wreck your microwave.

lol, I just read RR's strategy for using a pressure cooker to pasteurize, seemed so much cleaner than a cooler. I'm sure that's what turbolacis was referring to...
