You shouldn't have any problems with any of the jars you use. They can all withstand pressure cooking.

If you are going to be trying new things this time around, you might consider spawn bags (plastic "PC safe" bags with built in micro filter) instead of glass. You can pick up a cheap impulse sealer on ebay for next to nothing. My friend paid $15 for a brand new in the box 12" sealer. (An impulse sealer is used to seal the bags) You can get the spawn bags from fungi perfect or several other vendors. If you go with spawn bags, here are a few tips my friend learned through trial and error (the hard way):

1) wrap the bag with a cloth towel before you put it in the PC. If the bag touches the side of the cooker, it can melt. You can use cotton string (no nylon!) to pull the bag and towel into shape so they don't touch the sides.

2) do not seal the bag before you PC it. The micron filter cannot release the steam buildup fast enough and the bag will break open.

3) put something between the bag and the vent on the PC to prevent the bag from expanding and plugging the hole. My friend uses a canning jar lid (just the ring, not the lid part).

4) bags tend to hold more, so you need to allow more time during PC.

5) don't try to do two bags at once... at least in my friends small PC.

Once you get used to using bags you will never look back to glass again. Be sure you buy some extra bags the first time out. My friend screwed up around five or six bags before she finally got a good technique down.
