Jars can be stored almost indefinitly if they are sealed, and no oher growth started. Just pressure cook for a while, and if you want to sacrifice one, you can check if the moistured remained at a good level. Ive colonized jars that sat for 2 weeks.

you used the same tek as i did? yeh, someone told me that with mah pf tek jar, after i sterilized it, as long as it was sealed, they're good for however long. but i wasn't sure if it was the same deal with the rye jars before sterilizing. thanks, peace, raj

Throw them out! They are most probably contaminated with bacteria. Dont let them soak more than 1 day next time. By the way: Just smell them. If they dont stink like shit, then I was wrong, and you can proceed.

oh arite cool thanks a lot. they're completely sealed and it's only rye grain and bottled water so i wouldn't think that there'd be bacterial growth? but i could be wrong. wouldn't that be killed when i pressure cook anyways?

Bacteria and bacterial endospores are everywhere. The rye probably contained some (some thousands) when you bought it, and they're in the air everywhere. That's why we need sterilization at all. If bacteria have multiplied for a week in the bottle, by now it may have reached so immense numbers, that the chance that some survive the pc-ing can be quite high. You just simply have worse chances. Common sense. If you let grain stay in water for a week, it will go bad. No matter if it's sealed or not, if it was open before.

even soaking for one day is too long AFOAF had 18 jars sit over night and they all had bacterial problems even after being PC'd for hour and a half

Yes. You might be right. It is a very good idea to add some hydrogene peroxide to the water.

When soaking rye berries overnight, boil water first and then add it to the dry seeds so that you don't have the problem of bacterial smell.
