Getting started with quart jar rye tek

I am going to be doing quart jars with rye using the method described here.

I had a few questions.
I wieghted out 200g rye and the water, but it reads about 310ml on the jar. (A quart is 946ml). Is this normal?

Do the jars need to breathe much? Can I seal up the hole on the top? I was going to loosen the lid, but it said a full turn. The lid on requires a turn and a half to be on all the way. 1/4 turn maybe?

Also why should the lids be upside down?

UNless you want damn contams in that shit. screw the lids on tight when you pressure cook, and drill about 1/8" holes in the lids, and plug it with polyfill fliter floss. this will keep out the contams, plus you can screw 'er right down while pressure cooking
works excellent

unless you want contams, dont leave the lids loose.
