Pre-Heating Your Oven.
    #5204274 -

Its a common mistake people have to just turn the oven on and put your food in once it feels hot..

Ovens are made out of high density metals, the racks, door walls, everything inside needs to be heated to temperature before your oven is truly "pre-heated".

Even if you put a thermometer in your oven and wait till the second it reaches 400 degrees (air temperature) before opening the door, your oven is only properly heated to about 200 to 250 degrees.
Once that door is open all that hot air escapes and it then takes 15 even 20 minutes before the oven properly gets to temperature again.

If you turn the oven on for 30 minutes (20 at least) it lets the metals heat up to temp and once you open the door, put the food in and then close it again the temp will get back up to what you want it to be in 2 minutes instead of 20.

This is important most when cooking stuff that takes less than an hour to cook.

So, pre-heat your ovens properly. Allow at least 20 minutes but 30 minutes is best for all the metals inside to get to temp before you open the door.

Mine has a little light that goes off when it's hot..but it takes a lot less than 20 minutes, more like 5. I'm guessing it depends on the oven, but is mine lying to me? My food usually turns out fine, but fine for me is edible

Yours obviously means the air temp is what you want it to be..

Open the door and all that air is gone.

Once you close it you must wait till everything gets back up to temp and since cooking takes place when the heat bounces off of the walls your only just reading the air.

Your actualy cooking at much less temprature than you think you are..

Gass and Electric ovens "cycle" Some better than others. A real shitty one will heat an oven to 425 and let it slip to 375 once youve set it to 400.

This is why proper pre heating is a must.
