Some salmon and trout culinary ideas?

I have been out trawling lake michigan a lot this summer and have caught some big 12-15 pound lake trout and salmon. We usually take them back to the marina, skin em and grill right on the lakefront...but we now have about 10 fillets sitting in the freezer...any good ideas for preparation?

cedar plank, garlic, and dill rub for the salmon
do the trout up in lemons and some cracked peppercorn

try this for the salmon - quite good

marinate 3 inch slices of the fillet in a half n half soy/lemon juice mixture - allow that to marinate for 3-4 hours

next poach the salmon in the marinade itself - just take a deep malled frying pan and put enough marinade to get within 1/2 inch of the tops of the fish

now cover and bring to a boil

while heating slice some onions and grate some fresh parm cheese

when the fish is almost done - satarts to turn flakey and is still pink inside top with an onion slice and some parm

cover again and cook till onion is steamed and cheese is melted - another 2 minutes or so

Black bean sauce from the thai section of the supermarket is excellent on all types of fish
mix the bean sauce 50-50 with olive oil, rub the fish with ginger or a lemon, smear the black bean sauce/oil mixture all over the fish, then broil.

very good fish

salmon, ok I don't know the exact details, but I had this and it was amazing:


take some salmon filets and put it in some tin foil

cover it with brown sugar, onions, and a little bit of beer.


close up the foil and put on the grill, this is amazing stuff.

trout, i got yer trout recipe.

clean it, set it on a peice of foil. slice up 1-2 whole sticks of butter and 1-2 lemons, and arrange the pieces across the inside of the fish. toss in some fresh oregano, rosmary, whatever nice herbs you can find whole in the bottom of the foil add cracked black pepper and salt to the butter and lemon slices. fold up the foil real good (you might wanna use two layers) and then chuck it on the grill for a while, flip once.

when its done, you can pull the spine right off the meat, and you have two giant perfect filets with no bone in them. i think leaving the spine in while cooking gives it more flavor.

ok so make that and then make mash potatoes with it. so your leftovers the next day can be TROUT CAKES!!!

1-1/2 cups cold mashed potatoes
1-1/2 cups flaked cooked trout or other oily fish
1 egg, slightly beaten
2 tablespoons snipped fresh parsley
2 tablespoons grated onion
1 teaspoon fresh lemon juice
1/2 teaspoon celery salt
1/4 cup all-purpose flour
1 egg
1 tablespoon milk
1 cup fine dry bread crumbs
1 tablespoon snipped fresh parsley
1/2 teaspoon paprika
6 tablespoons vegetable oil

In medium bowl, combine mashed potatoes, fish, one beaten egg, 2 tablespoons parsley, the onion, lemon juice, celery salt and pepper. Set aside.

Heat oven to 450. Sprinkle flour on plate or waxed paper. In shallow dish or pie plate, blend one egg and milk. On another plate or waxed paper, combine crumbs, 1 tablespoon parsley and the paprika.

Drop 1/3 cup of fish mixture into flour. Roll gently to coat. Place in egg mixture. Flatten slightly to form 1/2-inch-thick patty. Turn to coat with egg. Carefully coat with bread crumbs. Repeat with remaining fish mixture. Set aside.

Coat bottom of 13 x 9-inch baking pan with oil. Place pan in oven for 5 minutes to heat oil. Add fish cakes. Bake for 8 minutes; turn. Bake until golden brown, about 7 minutes.

Smoked is cool!
Grill it and toss some salsa and cilantro on when done! Fantastic!!!!!!!!!

Smoke some... Is the way to go. When I go up north. I normaly smoke half the fish I catch.

I haven't used my smoker in almost 2 years:confused:, until yesterday...  Basic dry mix ... 2 C. brown sugar, 1 C. kosher salt, 1 - 2 tsp. garlic, onion, mustard and ginger powders, black pepper. Cut salmon into 6 - 10 inch long portions, cover with dry mix for 4 hours, shake sealed container or flip fish a few times in the beginning to coat fillets well. You could add beer, white wine, honey or maple syrup (or what have you)  to the dry mix for custom flavor:voila:... Air dry in a cool spot :cool: for 4 hours, then smoked for 4 to 8 hours(if I really load up the grill) on charcoal, apple wood chunks, large water pan between the fire and the fish. I reload apple wood a couple times to keep the smoke flowing. Temp stays less than 200, and finished product is kinda half smoked, half cooked and 100% delicious... :salmon: . . . :peace:
