Stalled cakes.

I have some cakes that have stalled. I am thinking about casing the ones with minimal uncolonized areas. I am thinking about injecting additional water into the others. Also, on some of the cakes it appears that there is guey flour on the bottoms. I am concerned these spots may be bacterial infections. What do bacterial infections look like? If so how do I treat them? Joshua

Joshua--- Re: guey flour... Could be water that got too hot and boiled into the jar during sterilization. Should eventually colonize---give it a week or two longer. How about the temperature? P. cubensis likes it about 87... lower than that can stall a couple of weeks... DON'T---take your cakes out of the jar before they are completely colonized or you will almost "fur-sure" lose them!!! If you accidently "un-jar" a cake and find an uncolonized spot that you thought was colonized (can you tell this happened to me?) Take some clean vermiculite and sprinkle to completely cover the exposed area. It acts like a bandaid-sort a-and I have had cakes survive with NO contamination. (PS---this also works when you have a cake with contamination and you have to operate and remove a portion... ) Best wishes---Tannis...
