My question is about casing, I have already searched this forum for an answer and came up with nothing. I have read that after you have 100% collonized cakes you can crumble or cut them into pieces and then case them with whatever case method preferred. Does'nt the cake get bruised from handling? or cutting? Any comments would be appreciated, thanks :)
