As the others have stated, the strand-like growth is rhizomorphic growth.  This is the good stuff.  Rhizomorphic mycelium usually is the mycelium capable of producing fruit, so that's what you're looking for.  If you get a chance, read this book http://www.amazon.com/exec/obidos/ASIN/0961079800/102-4534159-2922562 it gives you an incredibly firm foundation to start from.

EDIT: Would it be good to take off the lids and replace with something like a coffee filter+rubberband?

If you remove lids, you'll be opening them up to contams. Very bad idea. Plus coffee filters are shitty filters. Keeps out dust, but not spores.

Stamets / Chilton aren't very clear on WHY rhizomorphic growth tends to put out fruit. But here's a guess (I think, a good one, but anyone who knows different or can verify it, please say so) based on what they DO say. Mushrooms have two parts to their reproduction. First, is asexual. When a spore clones, it just divides and begins a karyotic mycelium colony. This asexual reproduction rarely produces mushrooms (some species more than others). When this colony contacts another karyotic colony, if it's compatible, they swap genetic material in sexual reproduction. This new dikaryotic mycelium is faster, more vigorous, and highly more capable of producing fruit. They also make it clear (and experience bears this out) that rhizomorphic growth is much more likely than cottony growth to produce fruit. Now here's the guess: dikaryotic (mated) mycellium is what appears as rhizomorphic growth. It's just a guess, because I can't find confirmation anywhere, except to note that all the pictures I've seen of agar culture grown from a piece of one shroom are rhizomorphic. If that were true, it would tend to bear it out because the mushroom itself is comprised of dikaryotic mycellia.

I'm not married to this theory, but it seems logical.

I have always thought of it very basically....mycelium is trying to form one solid network for moving nutrients and water from all over the substrate, to the pins. Cottony fluffy shit, seems to bind the substrate together more, more like a hard rock. Ropey strandy stuff though, stays looser and less compact and those hyphae are like highways compared to cottony shit (hilly dirt roads), better for transfering nutrients and water...

Just another theory  Maybe even same thing and a little of both of what were talking about, you may just be going more scientifically about it.
