Just enough water to cover the bottom plus a little more, and depends on what you are pressure cooking. Agar, 15-20 minutes no more. Casing, jars (before innoculation obviously) 45 minutes-1 hr.

And use a rack so the jars aren?t sitting directly on the bottom.

If you don't have rack for your P.cooker then may I suggest a rag on the bottom. The water level should be around 2/5 the way up the jars....so say around....11/2"-2" high. Before you put your lids on, make sure you wrap tinfoil around them.....then the top...and then the lid! wal la !
