i have just bought a pressure cooker and i was wondering when you sterilize the jars in it should you leave the lids on loosely, tighten them, poke holes in them, or is there anything special that you need to do? thanks mike

What do you mean by "the jars"? Jars of rye grain with plastic lids and filter disks, PF tek jars with metal lids, or something else? If you are using filter disks then you don't need to loosen the lids, whereas if you are using solid lids (no holes) then you will need to leave them on loosely. More information will help

If you are doing the PF tek, put the seal of the lid facing up, lid screwed on tight. 4 holes poked in lid, covered with aluminum foil. Thats what worked best for me.

i am using half pint jars just like the pf tek. i just put the lids on and gently screwed the cap on finger tight. when they were done there was a good bit of brown rice flour at the bottom of the jars, so i think i will try again tomorrow, using the upside down lids with holes punched in them and aluminum foil.
does anyone know what i did wrong, why some of the brf is on the bottom?

are you sure you mixed it well enough, added the right amount of water, and used a good ratio? PF-Tek for simple minds suggests 140ml Verm and 40ml BRF per jar

I don?t even put lids on mine of course they have aluminum foil over the top........ If you do do put on the lids I doubt it will matter much if they?re on tight or loose but I think I read depending on how moist you may want it loose or tight......

i used the right amounts... the only thing i didn;t do was poke holes in the lids and i think i may have slightly misused the pressure cooker, instead of turning it down to med or low i left it on high the whole time. also, do i need to put a washcloth on the bottom of the pressure cooker? and also i only have a 4.2 quart cooker and it only produces 10 psi.

I have only used aluminum foil as lids and have never poked holes thru it before pressure cooking........ I just leave the pressure cooker on high..... until it hits 15 psi and than i turn it down alil...... If it goes to 10 psi it still probabnly heklps better than no pressure cooking......... Goodluck !!!!!!!!!!!
