Old Pressure Cooker Question

Well i did it, i found myself a pressure cooker. it's old as hell but big as fuck. anyways... it doesn't have a regular pressure gauge on the top, it has a needle like thing sticking out, and on the inside i seen this little circle medal thing. it had wholes on the side and they were marked 5, 10, and 15. i'm guessing , whatever presure you want, you just it down ontop the needle and it regulates it. anyone know about these kind?

thanks for the info. good thing i knew that cause i would have been screwed if not. my second question is... i'm going to start with only 6 jars (PF Tek) but possibly more. HOw much water do i put in the pressure cooker? Do i fill till it reaches about half way up the side of the BOTTOM jar?

In case you have never used the rocker type before... you will want to leave the weight off until a strong flow of steam is coming out of the needle like thing. This ensures that you have a good head of steam in the cooker and not dry air. Once a good flow of steam is coming out of the needle like thing, put the weight on the needle like thing and let the pressure build up. After a while the weight will start rocking back and forth making a lot of rattling noise. Once this starts the correct pressure has been reached. You will want to turn the heat down a little at a time until the weight only rocks and rattles a couple of times per minute. Start timing for sterilization when the rocker starts to rattle. Be careful you don't run out of water in the cooker or the jars will probably crack. When your cook time is up, remove the rocker (I use some longfingers for this, it is very hot and a big burst of steam will let loose). After five or so minutes the pressure will have dropped so you can open it up. Do not use water to cool the cooker or badness will happen.

even more information, thanks a bunch! one more question though... how much water do you suppose i put in there? it's a rather large pressure cooker, the base is (from what i remember as i peaked at it last night) is a little over a foot in diameter. (from one wall to the other). if youc ould let me know, it would be very much appreciated. thanks!
