My friend bought the wqrong loaf pans at WMart and now they are covered with rust. Will these casings be safe?

While rust is not a contaminate, it can harbor contaminates.If your pans are rusted toss them they will only give you grief. The same thing is true about the lids and rings of canning jar lids.

Ive got some mycelium water in jars with lid that have rusted, and its still okay - however, since the rust was there in another jar, no spores will germinate... I got plastic jars instead

You're fine. Just give those pans a coat of paint before your next batch. Same goes for jar lids.
