how much oyster shell/calcium carbonate should i add to a casing for cubensis?

It depends on how much you're growing. Here's Hawk's 50/50 (plus) casing mix, to give you an idea of how much oyster shell to use:

15 cups vermiculite
15 cups peat moss
4 1/2 cups crushed oyster shell
2.4 cups of hydrated lime
1 cup short of a gallon of bottled water

I use about 1/3 of this amount for 12 cakes which gives a casing that's slightly more than 1/2" thick, so make sure to alter the amounts depending on how much you're growing.
