Karo & PC - Why Doesn't it Breakdown?

Why doesn't Karo or Honey break down during PC? If you read a bottle of honey it says, "Add to hot, but not BOILING water." Because boiling water denature the structural sugars. Why doesn't PCing do that? Or does it--but it just doesn't matter to the myc growth?

It does. Honey can be problematic because it contains many other things, like proteins, that can cloud the mixture up.

I guess 15 - 20 minutes at 250?F isn't long enough to noticably caramelize the sugars in karo.

Yeah, 20-30 mins at 15 psi is recommended. I never went over as I heard it can carmalize.

Even at 30 minutes it can easily. You shouldn't exceed 15 minutes, thats long enough to sterilize any liquid.

Boiling for 20 will work just as fine.

15min. is bare minimum for liquid sterilization at 15lbs. I recommend 15-20min. at 15lbs. There are pathogens that can withstand 212F. Citric
