Pot steaming vs Instant pot for sterilizing pf style pucks * 4

Ok so I've seen a few concerns about steaming vs pcing PF style pucks using flours other than brf, so I decided to see if there was any issues.  I'm using my experimental recipe in my signature for this experiment.  I'll also be using an instant pot since my PC is temporarily on its ass. 

Ingredients:


Rye berries;


Amish ladyfinger popcorn:


Hemp hurd:


Vermiculite:




Procedure:

Grains are ground in a coffee grinder and sieved.

Rye:


Popcorn:


Flours:



The hemp got the same treatment but wasn't sieved.  It got blitzed as small as possible:



Verm added:


Water to field capacity:

(This was before it got mixed)


Flours and verm/hemp mix:


These got thoroughly combined and jarred:


I'm in the process of processing these now.  It's been well over 20 years since I've steamed cakes and completely forgot how much of a PITA it is to make sure the pot doesn't boil dry lol.

The whole point of this is to see if steam sterilization will work with other flours besides brf.  I'm definitely not advocating taking shortcuts, but testing whether an alternative can work in a pinch.
The jar lids are unmodified.  These will be kept separate from each other in a cupboard with the lids finger tight for a week or two. Both are being processed for 90 minutes, the I.P. at max pressure and the pot at a steady boil.  I'm looking to see if anything tams out between the two.  Let's see what happens!

A PC, or instant pot on PC setting, is always the better option over steaming.

Even if your experiment with steaming is a success, and I hope that it is, I will still stand by that.

More PSI means more heat. I don't see why an IP wouldn't work if you ran it for the exact same time as you would with steam only. You could probably get away with less time, but why risk it?

I've been using a wheat heavy WBSF for cakes. I wouldn't trust that for steaming tbh. Your recipe is very interesting and I hope to see success.

I think testing for BRF replacements is a good call. The most accessible to people would be oatmeal flour.

Oatmeal flour got me some of my best cakes ever. Oat flour, from grain oats, was almost always junk in comparison for some reason. I also think it would handle just being steamed.

Oh I agree 100%, I'm all in favor of using the right equipment for the job.  I'm doing this to see if other flours besides brf will work steamed, I added the hemp just to use it up basically.  If nothing else I can redo this and omit it.  We'll find out in a couple of weeks if it's a viable option for someone just starting out.

I think the reason for that is the oatmeal is processed through rollers which creates heat during the process.  Just speculation at this point tho.  And fwiw the recipe does work when pressure sterilized:

Honestly I think the hemp might be the deciding factor.  If nothing else I'll redo the experiment minus the hemp, we'll see what happens in a couple of weeks.

Got a bag of rolled oats and should have some free jars laying around. Might give it a go tomorrow and prep a couple just to join in on the observation.

But I'll only be able to steam them.

Maybe someone else will give other flours a shot too...

Well, I had to prepare other stuff today, so I also prepped 4 rolled oats flour pucks.



Classic 2:1:1 ratio and 90 minutes of steaming. Though mine have lids with a ~2 - 3mm hole in the center and a double layer of Mefix tape. I'll leave the aluminum foil on them anyway.

I'll leave two of them untouched, and in the other two, I'll drop a small piece of agar.

Let's see if they hold up...
