Electric Roaster Oven For Sterilization

Hey Anyone,

Questions:

>>> 1.Can I sterilize my BRF jars in an electric roaster oven (18qt)? It has a thermostat just like an oven. Also it seems to keep moisture in foods better than any pot or oven as far as cooking goes.

A roaster oven doesn't really seem ideal to me, actually. I suggest using a regular cooking pot if you don't have a pressure cooker.
However, your oven might work, though I never actually tried sterlizing in an oven. Here's what I'd do:
Set the thermostat to 212F (100C) or a bit more.
Add water to the mixture according to PF-TEK recipe.
Keep the temperature of the jars at 212F for at least an hour to sterilize. This is usually enough. To avoid contams from ciste-forming species, prepare the BRF pixture some time (at least half an hour) before you sterilize the jars.
If sterilizing PF jars works in your oven, I don't see why sterilizing grain jars wouldn't work also. However, personally I think that sterilizing using an oven is not ideal, again, I suggest using a regular cooking pot.

i would put it higher then 212f more like 350

I think the dry heat of the oven would suck the water right out of the jars.

I agree with Bigcaps, I think that's gonna be a major problem. Especially if you decide to put the temperature up too high, as ahel suggested. I think 350F would be too hot, and you'd bake the substrate to a crisp instead of sterilizing it.

You need to get above 212* to sterilize grains effectively. That is why a pressure cooker is usually used. Buy one, it is worth it. If you can't do that, I would stick with fractional sterilization in a pot on the stove.

If you're gonna heat your oven a lot above 212F, you'll most likely burn your jars, I'm afraid. A pressure cooker is used to be able to cook at higher temperatures, but this only works because the pressure in the cooker is higher than outside, which causes the water to cook at a higher temperature. Ergo, if you heat up your stove too far above 212F, you'll just evaporate all the water (in you oven, the pressure is normal, so water will cook at exactly 212F) and burn the substrate once all the water has evaporated.

An oven is simply not the way to go IMHO. I agree with shakta: buy a pressure cooker, or sterilize in a pot on the stove. Fractional sterilization is not necessary for PF cakes, but it won't hurt.

Thanks for the suggestions. I wouldn't want to jeopardize losing my babies to contamination, so I will definitely be acquiring a PC asap to ensure their birth into the world. By the way, if anyone else has suggestions feel free to provide me with more insight before I go in search of a good deal on a PC.

I have used the roster over be-4 it will work.
It is not dry heat. You put water in both parts.

Unless the water gets all steamy it doesnt matter....an $800 medical autoclave is just a high temperature pressure cooker with a more accurate heat and pressure system. Steam is what gets 'em germ free. Ever open a pot of spagetti cooking while tring to sneek a peak...it will give you first degree burns. Why go through the trouble if you can just use a pot of boiling water.

True, but don't forget that in a pressure cooker, there's higher pressure --> higher boiling temp. of water, thus higher sterilization temperature. Also, I think the high pressure in combination with the higher temperature will damage any ciste forming species easier than normal sterilization conditions. So a pressure cooker is, objectively speaking, better. But I must also admit that I still haven't bought one.

I am not doubting the effectiveness of a PC...i am talkig about loading your jars into turkey roaster. PC are definatly first choice.

No ok, I'm not doubting your judgement, don't get me wrong here...:)

But it must be said, a pot of boiling water works perfectly well. It's a tad more work, but God knows I never do it differently!

I bought a great pressure cooker at a flea market for 5.00. Has worked several times, w/o any probs.
