I've always just done bigger fruits for a bit longer than I thought they needed and then added 36-48 hours for paranoia.

If you're consistently growing monsters and then drying them whole I'd be very interested in your drying technique.

Also may I ask why you're going through the extra trouble of drying individual giant fruits instead of running them through a mandolin or processing them in some other way first?

If aesthetics is the main concern have you considered cutting airway channels or something on the non-picture side to help with drying?

My dehydrator has racks and shelves so I can cater to any size and these guys being hollow didn’t need more than 24 hours at my standard 70c temp but more solid ones I sometimes need another 12 hours to be sure, and why not leave them whole? Easier to gauge the dry weight and some of my friends love getting a massive monster to show off feels like sacrilege ripping up an amazing specimen like that.
