Growing mushrooms for somebody with celiac disease - does the growing substrate need to be gluten free?

Hello folks!

This may sound like a dumb question, but my friend has celiac disease and there shouldn't be any traces of gluten in the mushrooms. I usually grow shrooms on rye, which has high levels of gluten. I don't want to risk her having severe stomach problems while tripping. So my questions is:

1) What substrates have you used for growing cubensis and/or panaeolus cyanescens OTHER than rye/wheat? Maybe cubensis whould thrive growing on (pure gluten free) oat but panaelous probably wouldn't?
2) Have you given shrooms grown on rye to somebody with severe gluten intolerance?
3) Experiences with oat? I guess it is better than corn anyway? Pure gluten free oat would be easily available for me.

Gluten is a abundant protein in rye and wheat, so maybe there is a possiblity that the mycelium breaks it efficiently. Thoughts?

You can grow on popcorn.  Pans especially like it.

But you don't really need to, because they don't transport gluten into the fruit bodies.

You can use popcorn, oats (whole grain oats and not oat flakes), quinoa, sorghum, millet . I'm personally big fan of brown rice for a grain spawn. Each grain needs to be preared a little bit diffrent so you will need to do some research about some of it.

But as a tree frog said - they dont transport gluten into fruit bodies.
If this person have some stomach issues then take into consideration that whole dried mushrooms can be hard to digest sometimes

While oats are naturally gluten-free, they are frequently grown next to wheat and cross-contamination can occur. This is why you'll see some oats labelled as GF and some not; the former legally have to be grown a certain distance away from gluten-containing crops to have that label (in the US. Can't speak for other countries)

That said... while mushrooms themselves may not uptake gluten, they're still in close proximity with the grains. Ever went to pluck a shroom and it took some substrate with a grain attached to it?

Based on that and feedback from acquaintances with celiac, it would be best to play it safe and stick to the dedicated GF grains. And wash any tubs thoroughly that were previously used for grows with gluten-containing grains.

Yes, I’m not worried about the gluten being carried into the fruitbudies but the remnants of gluten on the surface of the fruitbodies. The fruitbody has to pop out somehow anyway. Somebody with a celiac disease it really can be a problem. I dont want my friend to poop her pants while tripping heavily, not to mention about the pain.

I can find this pure gluten free oat grain easily. No problem. Also millet is widely available. Quinoa is quite pricey unfortunately. I’m not very fond of the idea of using popcorn as it doesn’t seem to make as high yields as rye. I’ll use horse manure as a bulk substrate though, so maybe it isn’t a big deal if I’d use a “less ideal” grain.

Have you noticed differences between different grains?

Go with what's available and what you're familiar with. It sounds like this is a close friend; you could also slice off stuff far from the substrate for them and keep it separate.

Plenty of people who are capable of digesting gluten still have GI issues with mushroom fruiting bodies.

I'd be surprised if the 100% colonized grain substrate still had enough gluten to attach itself to a growing fruit and cause actual celiac issues.

I’m not celiac, but gluten sensitive. Really sensitive. It doesn’t matter what substrate I’ve used, stomach still shreds lol.

You can always cut the fruit bodies off the cake instead of pulling them, then you can no chance of cross-contamination.

Oats have worked really well for me, but Milo is next on my list. I get very unreliable results off of corn, no matter how well I prep them.

I think it's only a 6 foot strip of land between crops and have to be rotated out to prevent unwanted gluten growing where it shouldn't. Most cross contamination comes from equipment shared with gluten grained cereals.

While generally tolerated, a small subset of individuals with celiac disease may react to avenin, a protein in oats, even if the oats are pure.

My friend can digest pure oat and mushrooms in general without any problems, but when it comes to grain like rye things get difficult. I would assume that 100 % colonization should do the trick but on the other hand, why take the risk if there are alternatives available.

I did a little digging on this topic as well. My tests were with myceliated grains searching for the ideal gluten free option. I settled on quinoa even though it is more expensive and a PITA to work with.

My friend is not celiac but gets severe inflammation from gluten causing breathing issues. So she gets nothing from me from a gluten grain grow. I agree that the mushrooms do not uptake the unconverted gluten in the fruits, but I don't want to take any chances where a health concern is known.

As was said above, any of the grains will work when properly prepared. Millet and sorghum(milo in the US) are great options. I found both to be easy to work with if you can find them easily. Brown rice is an excellent choice when prepared well. It is cheap and likely easier to get in bulk than quinoa. Preparation is a little tricky to keep it loose for shaking, but it can be done. Corn is really easy to work with and I trust tree frogs recommendations for all things pans related. It did not perform well in my myceliated grain potency comparison, but that may not mean anything for fruiting.

So basically, what Nichrome said more succinctly a couple of weeks ago. I will go back to my hole now.

Another thing to note, is to check your batches. I recently got a bag of milo (sorghum) that had corn and a bunch of wheat berries in it as well as a few beans and peas.

Luckily I found sorghum, millet, oat, rye berries and brown rice. Afaik oat and brown rice may clump. Do you guys add some gypsum so as to prevent clumping? It should also work as a pH-buffer at least to some extent. I’m not good at trying new things and methods because the recipes I’ve used before with rye and gypsum seemed to be fool proof. This is also the first time for me to grow pan.

I use brown rice and I don't have issues with clumping but I think grain prep is the key. My method is:
1. Put rice into boiling water for exatly 9 minutes.
2. Then dump it into collander and rinse really good with cold water to stop the boiling process and wash out all the excess starches.
3. Leave it for few minutes to drain all the excess and it is ready to be put into jars.

Fungi do not incorporate wheat tissue directly into the mushroom. Instead, the mycelium secretes extracellular enzymes that hydrolyze gluten proteins into smaller molecules like amino acids and short peptides. These are absorbed and metabolically reassembled into entirely new fungal proteins and cell structures.

So even though the fungus grew on wheat, the mushroom itself is biochemically fungal biomass, not retained wheat biomass. Any remaining gluten is usually only trace contamination from residual substrate or handling, rather than intact wheat proteins transferred into the fruiting body.

This trace contamination from residual substrate is exactly the problem for somebody with celiac. This residual substrate can be on the “skin” of fruitbodies. For example if you prepare gluten free food, you can’t leave even traces there. Mushroom itself wouldn’t absorb complete proteins inside. The question would be if mycelium covered grain is very high in gluten or not. Usually fermentation breaks down gluten, so maybe the mycelium can also do the trick.

For those who may be unaware of the severity of celiac disease: I know people who could be sent to the hospital with severe intestinal damage if they ate something that touched a piece of bread. This isn't even an exaggeration. You don't take chances with this condition.

I do oats and Milo the same, rinse them, boil for 30-40 minutes, then strain them. I’ll usually dry them out on a tray, sometimes overnight. Usually six hours, depends on RH in the house.

I find my grains perform best if almost none stick to my hand when I run some through it. Wetter than that and my longer PC time soaks them.
