Stockpot with Basket for bulk substrate pasteurization ?

Hey fellow mushroom enthusiasts.  I was looking to start growing wood loving mushrooms like oyster, lions mane, shitake, beach and maybe others as a side business / hobby. 

Do you foresee any issue using something like this to pasteurize bulk substrate?

That is the 62QT version which would be about 15 gallons.  The inner basket would sit 3 inches above the bottom so it could be filled with a decent amount of water. 

Maybe I'll have to get some type of insulating sleeve to place around the outside of the stockpot to hold in the heat longer?

I was planning on using Mushroom Spawn Grow Bags to place the substrate into after mixing it in a 50 gallon garbage can.  Then I would just essentially steam it in the stockpot for around 6 hours or until it reached an internal temp of 155F measured with a digital thermometer. 

I have a 23-QT pressure cooker but this 62QT stockpot would allow me to pasteurize about 3x as much material at once.  Plus I would be buying either an electric or gas powered burner so I could do it all outside so it won't be sitting on my stovetop for 6+ hours at a time. 

I tried searching for the forum for someone doing this same thing but I only found one post about it. 

I also considered using a beer brewing kettle pot with an attachment for a nozzle on the bottom so I could fill it with water as needed during the pasteurization process, but I feel like this stockpot would be enough.

Any thoughts or insights through previous experience would be welcome.  Thank you!

What are you pasteurizing. Coir?

No not planning on using coir. 

From what I've seen I'll likely be using 50% Oak Hardwood pellets, and 50% soy hull pellets, and a bit of gypsum.  Also of course will be hydrating the material to field capacity hydration levels with water from the tap.

The wood may vary though, cherry, hickory, Maple, Cherry, Alder.

You don't want to pasteurize supplemented sawdust bags. You want to sterilize them. You can either pressure sterilize which will take 3-4 hours at 15 psi or you can steam sterilize for 12-18 hours.

If you go the route of steam sterilization than you want to make sure you have enough water in that pot to last the duration.

Thanks for the advice BrownBear! Really appreciate it. 

Now since I'm going to have to run it for 12 hours or more to reach the proper sterilization temp this is my new plan.

I'll do a run with the stockpot and basket without any bags, just water, and measure how much water I lose say after 2hours, 3 hours, 4 hours etc of steaming / simmering the water.

I will also measure how much water I get from the hose with the timer in a one minute interval.  Once I know how much water I get, and how much water I have to replace, I'll then use the timer to automatically replace said water using the steel hose.  So I may have to cut a notch in the lid of the stockpot as I plan on just feeding the hose down into the stockpot beneath the basket and leaving the hose resting there for the duration of the steaming process. 

I just really want to avoid having to use a float valve because it looks like I would have to heavily modify the stock pot to use a float valve, and I think this stockpot and steel hose with a hose timer idea would be much easier.
