I dont think you would want to use a gallon jar, it would be too deep. It would be harder to rehydrate, and take longer to colonize. You might get more flushes because there is more substrate to supply nutrients, but in the long run I dont think it would be worth it. You would be better off with somthing that is more flat, with more surface area.
