stalled for a long time... not infected... now what?
    #2631941 - 05/03/04 03:17 PM (13 years, 23 days ago)

My friends jars have been incubating for about 2 months now... They have not TOTALLY stalled... but there is minor growth each week. They are NOT contaminated, they are upside down. They are nearly done, but this stalling is not looking good. Only the VERY bottom won't fully colonize.

Should these be pulled and cased? or pulled and dunked? trimmed? patch cased? set on fire? is there ANYTHING that can be done? just fruit them maybe?

Set them upside down on a tabletop and pat them a few times so the cake gets loose in there. It'll promote air transfer a little better. Worked wonders with my cakes, they were stalled and now three days later the bottom is almost completely done.

However setting them on fire would be a funny little endeavor too. I bet they'd stink... :mushroom2:

I am willing to bet they are pint jars, if they are I would birth them and cut off the uncolonized portion. IME they will not colonize fully at all, but you should be fine if you cut off the bottom, and then fruit. Good luck with that!

I'm going to suggest that he try the first suggestion before the second... they are halfpints.

You could also unscrew the lids 1/4 turn and leave them upside down-it will create a little more room and provide some air exchange, just dont unscrew them too much-you dont want them coming off, just enough to let them breath a little!

My 2 cents

I think there isn't enough Oxygen getting inside the substrate........ so being upside down i take it the whole are on bottom not getting oxygen?

It doesnt need oxygen to colonize,it needs co2,oxygen starts part of the fruiting sequence.

true ,but what I am trying to stress is that his jars have stalled probably becuase of lack of air exchange and by unscrewing the lids it will create more space for them to breath.
But now from my understanding that when you are colonizing any substrate you dont want it to get fresh air because when you reduce the co2 content(introduce fresh air)you are initiating the fruiting cycle (along with adequate light)so that is why you keep it covered until it fully colonizes.

But yes, Alounacara, I stand corrected-it needs oxygen to fruit.
My bad!!

You dont want to introduce any contammed air unless they are 100% colonised

exactly, but he said the bottoms wasnt colonized so that left me assume that, that was the only place-and if you turn your lid a 1/4 turn it wont hurt it,besides I would rather take a chance of doing it like that instead of birthing it and cutting away the uncolonized portions and casing it-who has greater odds for contams?

okay, they do need o2 to colonize. The point of turning them upside down is because co2 is heavier than air, and it will drop out of the holes and be replaced with o2. The suggestion of tapping it down more is to give it more room for the air to exchange. there are holes in the lid and a layer of dry verm, so there is no need to unscrew. I will suggest that he taps them down, they havn't totally stopped, just slow as hell.

well, leave them on the side them so that the air space at the bottom of the jar will have both O2 and CO2 in it

i might be a retard so dont trust that it just seems logical
