When crumbling the cakes onto the casing; how far apart should they be spaced? Like what is a good number of 1/4 pint cakes to case an 11 inch by 18 inch pan?

I'd use 4 1/2 pints for an 11 x 18. Just crumble them into "pea" size chunks and space evenly.
I've got nicotine stains on my fingers. I've got a silver spoon on a chain. I've got a grand piano to prop up my mortal remains PEACE HeGz

At least 6, 1/4 pint cakes per 7 X 7 pan. Mist daily until pins appear. That works out to be about 11, 1/4 pint cakes per 11 X 18 inch pan.

AFOAF slices two cakes, each into three slices "like a cucumber" as I have read. Take the third cake and crumble it up to fill the spaces between the slices. All of this is in a 4x10 casing tray... This make about 1 and 1/2 inch layer of colonized substrate covering the entire layer of verm in the tray... He then covers the substrate with 1/2 inch of 50/50+ casing soil..... After this straight into the terrarium with high humidity and he does not mist them during colonization... He has had good luck with these three cake casings Peace... If it is a cube and 1/2 pint PF cake jars then make a mini monotub or tray like 12"x12" and crumble one in each layer with some good bulk sub.

If you use the crumble in a monotub with pasteurized bulk sub then dont mist for first flush, only 2nd and on.
