My ex had some cookbook that said to use white flour in alfredo sauce, and she made that shit all of the time.  It was absolutely horrible, and to make matters worse, she got incredibly offended if I tried to put black pepper on my dish.  It tasted like liquid flour on noodles.  I watch lots of cooking shows and the few times I've seen them making any sort of white pasta sauce they've never added flour.  If you need to thicken it up a little then it probably just needs more cheese or cream, or you could add a small amount of corn starch (a little goes a very long way, unlike flour).

As far as what to add to your Alfredo, well I'm a huge fan of spicy sauces so I'd try adding some diced hot peppers or red pepper flakes.

Maybe some corn starch if you want to thicken it, but flour?

The recipe has flour in it cause that's how that individual preferred to make it.

For a lot of creamy sauces you start with a roux (melted butter with flour) and then add liquid. I don't know if that's the official way of making alfredo sauce but that's how I would approach it.

:lol: It is absolutely to thicken it. I personally prefer alfredo made starting from a  roux (equal parts flour and fat)  with cream as opposed to the traditional butter and parm only.

When I'm drunk/high making sauces or gravy I think of flour to thicken it.Shit never works.i try not to do it now.

those are bechamel based sauces... the closest one to an alfredo is a mornay which uses gruyere for flavor and does thicken with flour.

but alfredo is thickened with cheese.

You may have better luck starting with flour. Assuming you mean white gravy, that's usually just a roux with some salt and black pepper, and sausage/hamburger. Super quick and easy, and can be done while the biscuits bake.

bechamel is milk + onion clute' thickened with a roux.

its the mother sauce of MOST cream sauces.

but alfredo is not one of those :smile:

white gravy sort of is a derivative of bechamel... and would be improved with the onion clute :smile:

i've tried it with roux, its not good.

experimentation is important. somethings work.

roux in alfredo is not one of those things that work :smile:

There's no better time to start learning than now. It really is as easy as reading and following a recipe, not to mention rewarding. An upside to cooking, as opposed to baking, is that you can easily fix mistakes or adjust to your preferred taste as you go.

I have heard that alfredo is reserved for tourists in Italy :lol: No idea if there's any truth to that though.
