Tall ones are great for g2g transfers and working with bags. I opted for a long and wide SAB for agar work and 1/2-1pint jars.

I picked up a meat thermometer and have been following Frank's pasteurization tek.  It works well staying within the proper temp range.  Just increase the starting temp of the substrate by 15-20 degrees on medium heat, then shut off heat, and let it cool down.  Easiest way to pasteurize.

Hydrate whatever you’re pasteurizing, I put it in an oven/unicorn bag and then add water to the pot, then hit the “keep warm” button and it holds pasteurization temps indefinitely.

I looked at Franks tek and if you go to the tek it's a continuation of, he says it's outdated and use bucket tek.

Are you prepping supplemented substrate? I like to sterilize.

Same. I went from stove to sous vide and finally to Instapot. I had high hopes for sous vide but it was a lot like the stove in that you have to increase the temp above your target temp and then lower it back down, and deal with delays in temps etc. Instapot is just no muss no fuss. Put it in a bag (I've done both ziploc and vac bag with equal success), dump it in the pot, add water, put lid on, hit button, forget.

How much water do y'all put in and how long do you run it?

Do you raise the bag off the bottom?

It doesn't really matter too much because it's getting heat from all sides and there is a lid on it so it really helps heat the substrate up equally. I load a ziploc bag of however much I'm going to cook, then mash it down as I close the zipper in order to the majority of the air out (it is not critical but the less air, the less it will want to float), put it in the empty pot, then add water until the water is about 1.5" to 2" from the top of the pot while you push the bag down to keep it submerged. I will then put a small bowl or dish or something on top of the bag to help push it mostly or completely underwater, push the lid down on top of that, then run it on keep-warm mode up to 12 hours (I usually do 12 but sometimes do 5-6 when in a hurry). It holds 163F. No need for spacing off the bottom because the amount of heat going in is very low on keep-warm mode.

Yeah it usually doesn’t hold much water if you’re doing a decent size bag of sub.

I add as much as it’ll hold then just set the lid on top.


I almost always do it before bed so it runs overnight, but it’s overkill. As long as you hydrated your sub/casing it should get up to temp quick. I used to use a wireless thermometer probe thing to make sure the center was hot enough but quit after a few runs.

I sterilize substrates unless it's manure.  Is there a better/easier method than Frank's to pasteurize manure that doesn't require an instant pot?  I do like the idea of just pressing one button so I may have to look at the instant pot option.

What type of souse vide was that? They should hold one and the same temp regardless what type so why did you have to adjust temperatures?

Asking because I am using a small S/V cooker (5.5 quart)that looks like a square slow cooker and wanted to switch to stick type and
cooler bin to make more at a time.
