I'm hooked on standard munton's  ale yeast.
Reasons being:

It had medium ester production and lets the recipe shine
Its really cheap!
It had medium attenuation leaving the perfect amount of residual sugars/body
It has medium flocculation which can produce a semi hazed beer but always a great head

I do like some belgians and octoberfest yeasts but this is my staple for those reasons

^^ I've never actually tried the Munton's.  US-05 has been my standard for everything neutral.  I'll have to give it a shot some day.

Sipping on the fully aged, carbonated version of the reishi stout right now.  It actually came out pretty good!  Fairly bitter, I actually think I used about the right amount of reishi if it can get a sweet stout to be this bitter. 
I've heard of people using reishi in IPA's but it just seems like it would be too much bitterness... In this stout?  Pretty awesome though.  Healthy beer :laugh:

lol, it's not the first time either...

When it's a whole batch, no problem but when just a couple bottles and the rest goes to secondary, fuck if I remember to add the damn sugar :doh:


Make a Carbonator cap and use a small CO2 tire inflator to force carbonate!

Used 2L soda bottles work really well and they will hold way more pressure than you will use.  I have had them up to 50# with no issues!

Would be nice to have some more like a liter size, and in brown.  I'll have to start drinking root beer :lol:
