Brewing a witbier without witbier yeast.
    #16025266 -

So I've got this recipe for a delicious imperial Witbier. I've brewed it about 3 times now and it's just delicious as all-get-out using Wyeast 3944 or WLP400, but I'm thinking now about trying something different with it to see what happens. Not sure if it's a good idea though so I came here for some feedback.

So here are my thoughts on other yeasts that might be tasty in this recipe;

WLP300
WLP380
WLP001 (Blue moon apparently is brewed with an ale yeast?)
Or even perhaps a Saison yeast?

What do ya think?

If you're trying for a very particular taste, it might make a difference. But if you just want to make good beer, it won't hurt it.

I make substitutions all the time due to availability. I've made good beer with bread yeast that's better than all the mass produced American beers. It all depends on how picky you are.

I was going for a specific taste the first time and I pretty much nailed it. Now I'm shooting for a delicious beer of any sort. As mentioned, Blue moon is made with an ale yeast, so sometimes the strange ones are the best. Do you think there's any truth to the rumor that Hefeweizens are generally "Cloyingly sweet?"

Hefeweizen's aren't something I'm that familiar with. I drink Abita wheat, but that's about it, since I didn't really care for the few others I've had. I've made a wheat home brew before following a recipe from "The Joy of Home Brewing", it turned out ok, but it was 2/3 barley.

Saison would be great but I think I'd have to drop the spices since Saison yeasts contribute so many complex esters and phenols of their own. Still would be delicious.

Are you familiar with FunkWerks brewery? They have some of the best Saisons I've ever had. Incredible beer.

no beer made properly should be cloyingly sweet. Maybe if you go overboard on a milk stout or RIS. Anybody who made that generalization about German wiessbier just wants to hear them-self talk. Lots of that going on around beer these days.

Dont use a german wheat yeast like Wienshephan. You won't have a wit, you'll have a weissbier.

If I was going to try and alternative to the W#3944 id check out the W#1214 abby ale. I used it in a Belgian Pale ale this winter and it has a nice spicy phenolic nad soft ester profile perfect for a wit. Or a saison yeast will work. I usually recommend the W#3711 French over the Belgian as it runs better at room temp with less stuck feremntations as seen w the Belgian.

Whatever you do, have fun with it. Cheers!

 well yeah, I know that.  My question wasn't so much about if the name will change as much as how the flavor will be different. But that said, the rest of your post there was pretty solid, I appreciate the feedback! Also I dig your username haha.

And I do love a good saison, so maybe I'll try that next. If I'm brewing a saison though I'm going to clone Funkwerks Tropic King since I have the recipe and it's an incredible beer.
