Well, that pretty much sums it up - I'm going to try a recipe that used 3.3lb ea of John Bull light and dark extracts and about a pound of chocolate malt. The recipe did not specify what type of hops was used however. Here it is - what type of hops would you use for this recipe?
3.3lb John Bull Light extract 3.3lb John Bull Dark extract 14oz Chocolate Malt 1/2c. Lyle's Black Treacle 4oz. Hops - 2oz boiled for 15 min before addition of Chocolate malt, 2 addl oz. simmered at 156f with Malt for 6 hrs.
I can get just about any hops locally in pellet form, and several types whole. I am thinking of Fuggles and or Cascade... pointers?
I'm also curious as to what type of yeast you'd use if you were making this yourself.

i would personally lean tward HALLERTAUER or WILLAMETTE hops.. they tend to have low bittering qualities that you would like to have in a stout.. as for yeast i would stick with a top fermenting yeast (Saccharomyces cerevisiae) as they are traditionally used in stouts..

You'll want to make it with English variety hops. Target, Challenger, Fuggles, East Kent Goldings. Generally for a stout, you want all bittering hops and very little character or aroma, so put them in at the beginning of the boil.
To keep with the English Style, White Labs WLP002 English ale would be a good choice. Slightly lower attenuation, and under warmer fermentation temperatures it adds some nice fruity esters, but even that should be kept to low levels.

The reason I was considering adding some cascade was to try for a fruity undertone, so I will definitely take your advice on the White Labs WLP002. Sounds perfect, and I am inclined to use all fuggles for aesthetic reasons .
TYVM for your replies!

Like your hop recommendations.....fuggles definitely if I were to do the above recipe. Fuggles gives a nice earthy taste to the brew......if you are looking for "fruity flavors" I sometimes throw lemon cest in the last 15 min of a boil.
