You may be able to find *Mushroom Batter Mix* right next to the mushrooms in a grocery store. My local HEB has it.

Those things rule....deep fried mushrooms..... some restaurants have better versions then other's though.....I tried making them and I was unsuccessful with a "kryspy fry mix" all purpose frying mix....kinda turned out half ass'd. Didn't know they had a mushroom fry mix though....

for morels, i wonder if it would be good to "wine batter" them, using red wine in place of beer.

I almost always deep-fry my mushrooms in a Dual Fry Daddy with onion rings and sometimes Broccoli too.
We typically get Gem Studded Puffballs and Lapoita Procera most of the time, which are excellent, deep-fried.
I use equal parts all purpose flour and dried bread crumbs (from the store-bought can) and dump in a bunch of spices like garlic, salt, and hot peppers for the breading.
Then dip in an egg-milk mixture, toss in a bag with the breading mixture and plop in the deep fryer till browned.
We make up a sour cream, mayonnaise, lemon juice, and chili/pepper spice dip for them too.
Peace

I worked at a contemporary Parisian French restaurant in a famous American culinary city and we took all mushrooms and cooked them at mid-high heat in clarified butter with only s+p until crispy and they were the best things ever. For such a simple treatment almost noone ever does it.

I do them sliced in a saucepan with a little 1? olive oil and salt for max. 2-3 minutes at high potency. Sometimes I also add some garlic, parsley and wine.
I will try that of the clarified butter, sounds great.
