I think that the vermiculite serves as a sort of barrier for when you put the needle throught the foil. But I'm not sure

Basicly PF seal with the vermiculate, then with only 2-4 small holes for contaminants to get through from the foil it makes it almost germ proof.(if you pressure cooked your jars) Its worth it if your having contam problems or else you can just lose 1 or 2 jars each batch and not spend a hour making the jars.

i've never bothered with the foil and have had many successes free from contaminants.
think it is essentially redundant.
