ass-backwards bacterial endospore genocide
    #15294322 -

Last night I simmered some rye+coffee+gypsum to full hydration but ran out of time to run the PC cycle so I just put it in jars with lids ready to go and figured i would do it the next day.
I did not soak my grains before cooking, lately I have had really good luck and as long as i bring up the water temp slowly (30 minutes or so before boiling) I never have more than 1 in 200 exploded kernels.

If one was to skip the soak, and just cook but then leave for 12 to 24 hours before sterilization would this allow for any endospores to germinate much like in regular grain prep? efficiency compared to soaking first?
As far as I can tell as long as the water content is still correct (dry on the outside, fully plump and hydrated on the inside) then why wouldn't it be better?
I know there was a thread about this from 6 years ago. Im curious if anyone still does this?
Uber curious - I kinda like doing things backwards.

We soak the grains to hydrate them, and pressure cook to kill the bacterial endospores as well as live bacteria and mold spores.

The idea that soaking causes the endospores to germinate so we can 'kill' them in the PC is outdated, and more recent research is proving that theory to be flawed.

The fact is, if you soak too long, you end up with more endospores than you started with, since many endospore forming bacteria begin to produce new endospores within hours of germination.

Thanks for the reply RR.
So then by letting the grain sit for 12 hours after the simmer before pressure cooking could very well have increased the spore load rather than decreased it?
I'm assuming you are still soaking your grains before processing, have any of your methods changed since making "lets grow mushrooms"?

Nope.

Soak 4 to 24 hours maximum, and then prepare the grains as shown in the grain preparation video on Let's Grow Mushrooms.

Update. 3 out of 6 jars got the wet spot... lesson learned... dont mess with the tried and true.

RR is what you said also applicable to hard wheat kernel?
