Quick Drying Question...

My FOAF wants to know if she should cover her drying mushrooms w/ saran wrap (or aluminum foil), or if it's best to leave them uncovered. should they be placed in the fridge while drying? Tbanks, Phil

Never cover them with anything unless you want mush.The best way I've seen is to crush up one or two Vitamin C tablets in a pint of cold water,dip your fresh shrooms in this.Fan dry for a day then dry in your sealed dessicant chamber. I've heard this works very well and that the vitamin C prevents bluing,its debatable whether or not it preserves potentcy.Can't give you any firsthand info since I don't grow/dry shrooms but it sounds like reasonable advise.

I'm slightly confused, My FOAF is not supposed to cover the shrooms but the container should be sealed? Thanks for your response, any advice about to refridgerate or not? -Phil

First, What method are you using to dry?
The best method is Fan Dry untill they are very dry, then use desicant for 24-48 hrs till thier completely dry
Place your mushrooms on a tray, Uncovered, and put that in front of the fan for 24 hours. Flip every once in awhile. (sometimes they can become stuck to the tray). You might even try an elevated screen so that air passes the bottom of the mushroom as well. ( http://www.theomc.com/index.cfm?fuseAction=teks.mmMBS is a good drying chamber). also, when they get dry, they might try to fly off the tray, so make sure to watch them.
once they appear dry, put them in a Sealed Desicant chamber. 24-48 hrs later they should be dry, depending on the quantity, and amount of desicant. IF you dont plan to eat them, or ahve any more mushrooms to put in, might as well leave them in there for a week.
Here is a simple Desicant drying chamber. The Pan has about 1/2" of desicant, and the mushrooms are put in the SIEVE (screen thing). Then the whole thing is put into a ZIPLOCK bag (the handle sticks out of the corner). Sometimes they mushrooms touching other mushrooms will get wet on the joins. This is normal, and doesn't really affect the potency.

a thing i forgot to add is that if you have a scale with .1 accuracy, you can test to make sure if they are dry.
after 24 hours in the desicant chamber, weigh them. Then put them back. Then, after 24 more hours. wiegh them again. IF they loose weight, put them back in. Weigh them every 6-8 hours. if they dont loose any wieght after 2 consecutive weighing's, they are dry.

i can tell you that in about 48-72 you can have cracker dry shrrooms if you just place them in front of a fan

yes... fan drying combined with placing in a dessicant chamber is widely recommended.
but do not place them in the fridge unless they are completely dried!
